Hot Steamy Tomato Soup From Scratch

With fall comes the delight in savoy soups, stews and fruits and vegetables bursting with flavour and warmth. We need not seek out comfort from a can, but should delight in the expression of love from our own stoves. The oven roasted tomatoes, blacked by the richness of sugars found within, emboss the rustic sense and comfort into the soup. Because the soup is pureed, I would be tempted to add a liberal amount of garlic to the tomato pan as roasted garlic is one of the earth's greatest treasures. Make sure to have a good conical strainer to filter out seeds and skins that can sometimes be a little bitter. Some fresh basil and oregano and a dash of honey should round out the astringency of the tomato.
